Most days I have absolutely no idea what to eat for breakfast. Confounding the problem is the fact that I’m not really the type of person to wake up, shower, get dressed, scratch the cat’s head and leave more than enough time to whip up something nutritious for breakfast.
I’m just not that together in the mornings. It’s more like: wake up, hit snooze, Olive jumps on the bed and sticks her nose in my face. Get up, shower, grumble about how I have nothing to wear. Lay on the couch and watch an episode of Grey’s Anatomy on Netflix. Realize I haven’t eaten anything yet and eat the first thing I find. Realize I should have left the house 5 minutes ago and run out the door.
Enter the wondrous world of the frozen breakfast burrito. Quite unassuming little thing. Wrapped up in aluminum foil, one would be safe in thinking that there was nothing special here. But you’d be wrong!. WRONG, I say! It’s a magical, glorious, life-altering thing. An entire breakfast – meat, egg, cheese, salsa – all wrapped up and frozen, patiently waiting for you.
And what’s even better? It heats up (sans-aluminum) in three minutes and doesn’t require a plate – perfect for when you’re watching Grey’s Anatomy.
Frozen Breakfast Burritos
7 flour tortillas, burrito size
12 large eggs, scrambled
1 pound breakfast sausage, cooked (crumbled)
1 cup shredded cheddar cheese
1/3 cup salsa (since tomatoes lose their shape and texture when frozen, I use mild salsa to “fake” tomatoes)
Assemble the burritos layered with the egg, sausage, cheddar cheese and salsa. Roll each in aluminum foil and freeze.
To reheat, unwrap from aluminum foil, wrap burrito in a very damp (but not soaking wet) paper towel and microwave for 1 and a half minutes. Turn over and heat for 1 and a half minutes more. Let cool and enjoy!
