The last few mornings there was frost on my car. And me, hands like ice, scraping away.
Conclusive proof that Fall has arrived and Winter is blustering in close behind.
Soon it will be time for chunky sweaters and even more voluminous scarves, bright gloves and soft hats. Nestling in close to the fireplace with cups brimming with hot chocolate and melty marshmallows.
Soon we’ll braise and roast and stew.
We’ll eat from the roots, and leave the trees and bush and vine for Spring.
But for now, there’s still time for the freshness of figs and the creamy tang of goat cheese. For crispy baguette and sweet, floral honey. I’ll let the breeze flow through the open window one last time.
*I’m going to take a minute here to talk about Udi’s. When I first went gluten-free I heard a lot of horror stories about the quality of bread products available. And I certainly have been highly disappointed by various brands, but Udi’s has never lead me wrong. Their sandwich bread toasts like real bread, but you don’t have to toast it; it tastes just as good plain. My roommate just snagged a piece of toasted baguette and had no idea it was gluten free. And that’s why I eagerly bought Udi’s dinner rolls for Thanksgiving without any trepidation as to whether they’ll be good or not. I just know they will.
Honeyed Goat Cheese and Fig Tartine
1 thawed baguette (I prefer Udi’s)
8 ounces goat cheese, softened
1 teaspoon honey
5 figs, sliced thin
Fresh thyme leaves, to garnish
Preheat your oven to 400 degrees F and line a baking tray with parchment paper. Slice the baguette on the diagonal and drizzle with extra virgin olive oil. Bake for 5-10 minutes, or until lightly browned. Be careful – the bread can go from nicely browned to burnt fast, so keep a close eye on them.
In a small bowl, mix together the softened goat cheese with one teaspoon honey. Spread a layer on the toasts and top with sliced figs. Drizzle with more honey and sprinkle with fresh thyme.
